Spinach soup


Two small onions
One clove of garlic
One tablespoon of oil
250 grams of potatoes
375 grams of spinach leaves
700 milliliters of vegetable broth
200 grams of cream
Pinch of pepper
pinch of salt
pinch of nutmeg


Peel onions and garlic and cut them into small pieces. Cut the peeled potatoes into small pieces as well. Drain the washed spinach well.

Heat a little oil in a large pot and fry the onions, garlic and potatoes. Then add the spinach and let it steam for a few minutes in the closed pot. When the spinach reaches a medium heat, add the vegetable broth and cook for a few minutes.

When the potatoes are soft enough, mash the mixture with a hand blender and add the cream. Bring to the boil again and season to taste with a pinch of salt, pepper and nutmeg. Served with toasted almonds, this spinach soup tastes fantastic.
