This soup can be made in no time and you don’t have to spend hours in the kitchen. In less than 15 minutes, this Asian delicacy is ready. The soup is packed with healthy vegetables, vitamins and minerals, and ingredients that will make you happy. Mushrooms act as natural antidepressants, chili stimulates circulation and metabolism, and lime juice with its acidity is known to make you fun. In addition, the exotic flavors take you on a culinary short trip to the land of smiles.
Ingredients for one serving:
200 ml vegetable broth
150 ml coconut milk
4 mushrooms brown or white
2 red chili
1 pak choi
1 clove of garlic
5 cherry tomatoes
1/2 cm of ginger root
1 stick of lemongrass
3 leaves of kaffir lime
1 good dash of soy sauce
1 bunch of coriander chopped for sprinkling
Bring the vegetable broth to a boil and pour in the coconut milk. The ginger, lemongrass and lime leaves go into the soup from the beginning to release the aroma. It’s best to cut the lemongrass in half and tap it lightly. This allows the essential oils to develop better.
Now cut the vegetables into bite-sized pieces and add them to the soup. The vegetables must simmer for a maximum of two minutes. The vegetables should be steamed only very lightly. This keeps them crunchy and preserves the valuable ingredients.
Now you can season the soup with a little soy sauce and serve it immediately. The finished soup is only sprinkled with a little chopped cilantro and you can enjoy the Thai soup.
If you want it a bit spicier, just use more chilies, if you don’t tolerate spiciness well, you can also replace the chili with some red bell bell pepper. Red bell peppers, with their high levels of vitamin C, are also great for reducing your stress levels.
